Valentine's Day Dinner at Home

The countdown for Valentine's Day is down to the wire. If you struck out on reservations, we have ideas that are sure to impress!

 

1) Seared Filet Mignon with Scalloped Potatoes and a Prepped Side

Ingredients

For the Filet Mignon:

  • 2 filet mignon steaks from Red River Beef

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 2 cloves garlic, minced

  • 1 tsp fresh rosemary or thyme, chopped

  • Salt & black pepper, to taste

For the Scalloped Potatoes:

  • 4 medium russet or Yukon gold potatoes, thinly sliced

  • 2 tbsp butter

  • 2 tbsp flour

  • 1 ½ cups heavy cream

  • 1 cup shredded cheddar or Gruyère cheese

  • ½ tsp garlic powder

  • Salt & black pepper, to taste

Prepped Side:

  • Choose from your available options at Red River Beef

Instructions

  1. Prepare the Scalloped Potatoes:

    • Preheat oven to 375°F. Grease a baking dish.

    • In a saucepan, melt butter and whisk in flour for 1-2 minutes. Slowly add heavy cream, stirring constantly.

    • Add cheese, garlic powder, salt, and pepper. Stir until smooth.

    • Layer sliced potatoes in the dish, pouring cheese sauce over each layer.

    • Cover and bake for 45 minutes, then uncover and bake for 15 more minutes until golden.

  2. Sear the Filet Mignon:

    • Pat steaks dry and season with salt and pepper.

    • Heat olive oil in a skillet over high heat. Sear steaks for 3-4 minutes per side.

    • Add butter, garlic, and herbs to the pan, spooning over steaks for another 1-2 minutes.

    • Let rest for 5 minutes before serving.

  3. Serve with a Prepped Side

2) Grilled Ribeyes with Shrimp and Asparagus

Ingredients

For the Ribeye Steaks:

  • 2 ribeye steaks from Red River Beef

  • 2 tbsp olive oil

  • 1 tbsp steak seasoning (or salt, pepper, and garlic powder) from Red River Beef

  • 1 tbsp butter

For the Shrimp:

  • ½ lb large shrimp, peeled and deveined from Red River Beef

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 clove garlic, minced

  • ½ tsp paprika

  • Salt & pepper, to taste

  • 1 tbsp lemon juice

For the Prepped Asparagus:

  • 1 tray of asparagus from Red River Beef

  • 1 tbsp olive oil

  • Salt & pepper, to taste

Instructions

  1. Grill the Ribeyes:

    • Rub ribeyes with olive oil and seasoning.

    • Preheat grill to high heat and cook steaks for about 4-5 minutes per side for medium-rare.

    • Add butter on top while resting for 5 minutes.

  2. Prepare the Shrimp:

    • Heat olive oil in a skillet over medium heat. Add garlic and cook for 30 seconds.

    • Add shrimp, butter, paprika, salt, and pepper. Cook for 2-3 minutes per side until pink.

    • Squeeze lemon juice over shrimp before serving.

  3. Grill the Asparagus:

    • Toss asparagus with olive oil, salt, and pepper.

    • Grill for 5-7 minutes, turning occasionally.

  4. Serve everything together.

3) Fish Filet with Lemon Butter Rice and Asparagus

Ingredients

For the Fish Filet:

  • 2 fish filets (salmon, tuna, or mahi mahi) from Red River Beef

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 1 tbsp lemon juice

  • 1 clove garlic, minced

  • Salt & pepper, to taste

For the Lemon Butter Rice:

  • 1 cup white rice

  • 2 cups chicken broth

  • 1 tbsp butter

  • 1 tbsp lemon juice

  • ½ tsp garlic powder

  • Salt & pepper, to taste

For the Asparagus:

  • 1 tray of asparagus from Red River Beef

  • 1 tbsp olive oil

  • Salt & pepper, to taste

Instructions

  1. Cook the Rice:

    • Bring chicken broth to a boil, add rice, and cover. Reduce heat and simmer for 15 minutes.

    • Stir in butter, lemon juice, garlic powder, salt, and pepper.

  2. Prepare the Fish:

    • Heat olive oil in a skillet over medium heat. Season fish with salt and pepper.

    • Cook for about 3-4 minutes per side until golden and flaky.

    • Add butter, garlic, and lemon juice to the pan, spooning over the fish.

  3. Roast or Grill the Asparagus:

    • Toss asparagus with olive oil, salt, and pepper.

    • Roast at 400°F for 12-15 minutes or grill for 5-7 minutes.

  4. Serve and enjoy!
